Ingredients
- 1 cup cooked pumpkin cubes
- 1 (1 lb.) bag frozen stir fry vegetables
- 2 Tbsp. olive oil
- 2 Tbsp. soy sauce

Directions
Heat oil and soy sauce in a frying pan or wok; add remaining ingredients. Stir Fry over high heat, mixing frequently, until vegetables are tender. Serve over steamed rice.
