Brie & Puff Pastry Bites with Juniper Berries

Ingredients
1 puff pastry sheet
1/3 cup fig preserves

6 juniper berries (The Spice Hunter)

1 tsp pink peppercorns (The Spice Hunter)

1 tsp orange peel (The Spice Hunter)

Dash of cinnamon (The Spice Hunter)
2 tbsp honey
6 oz brie
6 slices of prosciutto
Chives to taste
Directions
Roll out the puff pastry sheet until fairly thin, cut it into 12 squares. Pierce each square with a fork so they don’t puff up while baking.
Place each square inside of a muffin/cupcake tin. Bake at 350F for 8-10 min or until lightly golden.
Add the juniper berries and pink peppercorns to a mortar and pestle and grind them.
Add the fig preserves to a pan with the honey, orange peel, cinnamon juniper berries & pink peppercorns to a pan. Cook for 2 min so it thickens a bit.
Slice the brie into 12 small squares.
Add some fig preserves to each of the puff pastry cups followed a slice of brie. Bake another 7-8 min
Top with prosciutto and chives.
