Marbled Apple Spice Cake

Ingredients
- 4 cups apples, sliced (peeled and cored)
- 1 cup sugar
- 1 Tbsp. flour
- 2 Tbsp. butter
- 2 Tbsp. water
- 1 Tbsp. lemon juice
- 2¼ cups flour, sifted
- 2 tsp. baking powder

1 tsp. The Spice Hunter Ground Ginger
- ½ tsp. salt
- ½ cup shortening
- 1 cup sugar
- 2 eggs
- 2/3 cup milk
- ¼ cup molasses
- ¼ tsp. baking soda

1 tsp. The Spice Hunter Highland Harvested Saigon Cinnamon

¼ tsp. The Spice Hunter Ground Madagascar Cloves

¼ tsp. The Spice Hunter East/West Indies Ground Nutmeg
Directions
Combine first seven ingredients together in a saucepan. Cook over medium heat, stirring occasionally, until apples are tender. Pour into a greased and floured 9 x 13-inch pan. Sift together the 2 ¼ cups flour, 2 tsp. baking powder, 1 tsp. ginger, and ½ tsp. salt. In a mixing bowl, cream shortening and sugar; add eggs then beat for 1 minute. Add alternately the milk and sifted dry ingredients. Place half of the batter in a second bowl. Blend in the last 5 ingredients. Spoon both the light and dark batters alternately over the apples. Bake at 350°F for 50 to 60 minutes. Invert onto a serving platter or rack covered with waxed paper. Serve warm or cold; top with whipped cream, if desired.
