French Onion Soup

Ingredients
- 3 lbs. sweet onions
- 2 Tbsp. vegetable oil
- 2 Tbsp. butter

¼ tsp. The Spice Hunter Fine Black Pepper

¼ tsp. The Spice Hunter Granulated California Garlic

1 The Spice Hunter Bouquets Garnis
- 1 tsp. sugar
- salt, if desired, to taste
- 6 cups beef broth
- sliced French bread
- 1 cup shredded Gruyere or Swiss cheese, or more as desired
Directions
Peel onions and slice into very thin rounds (using a mandolin works well for this). Toss onions with oil in a large stock pot. Cover and cook on medium-low for 20 minutes, stirring occasionally. Remove lid, increase heat to medium and continue cooking, stirring occasionally for about 10 minutes or until most of the liquid has evaporated. Add the butter to the pot, increase heat to medium-high and cook until onions are deep golden brown, stirring frequently to prevent burning. Add seasonings and sugar, then broth. Bring to a boil, reduce heat and simmer for 15 minutes. If desired, add salt to taste. Divide soup into 4 to 6 oven-safe bowls, top with bread and cheese, then broil until cheese is browned and bubbly.
