Ingredients
- 2 cups all purpose flour
- 1 cup unsweetened cocoa powder
- 2 Tbsp. baking powder
- ½ tsp. baking soda
- 1 tsp. salt
- 3 cups packed brown sugar
- 6 eggs

3-5 tsp. The Spice Hunter Chipotle Cinnamon Global Fusion Rub, depending on taste preference

½ tsp. The Spice Hunter Pure Vanilla Extract
- ½ lb. unsweetened chocolate, chopped
- 1 stick unsalted butter
- 1 cup granulated sugar
- 1 cup confectioner’s sugar
Directions
In a large bowl whisk flour, cocoa, baking powder, baking soda, and salt together. In another bowl, whisk brown sugar, eggs, Chipotle Cinnamon, and vanilla. In a double boiler melt chocolate and butter together. Whisk chocolate mixture into egg mixture until combined. Fold in the flour mixture until no dry streaks remain. Let dough sit at room temperature for 10 minutes. Place granulated sugar and confectioner’s sugar in separate shallow dishes. Working with 2 tablespoons of dough at a time, roll into balls. Drop dough balls directly into granulated sugar and roll to coat. Transfer dough ball to confectionary sugar and roll to coat evenly. Evenly space dough balls on a baking sheet. Bake cookies until puffed and cracked and edges have begun to set but centers are still soft (cookies will look raw between cracks and seem underdone), about 12 minutes, rotating sheet halfway through baking. Let cool completely on baking sheet before serving.
