Chicken Parmesan Casserole
Pound chicken breasts until they are ¼ inch thick. Cut into 1 ½ to 2 inch strips. In a small bowl, beat eggs and set aside. In another small bowl, combine breadcrumbs and parmesan cheese. Dip each chicken strip into eggs, then into breadcrumbs. Preheat oven to 400°F. Heat 2 Tbsp. olive oil in a large skillet over medium heat. Add chicken strips to pan and cook until crispy, a few minutes on heat side. Place chicken in a large baking dish and cover with spinach. In a bowl, combine mozzarella, ricotta, basil and garlic salt. Divide cheese mixture over spinach, pour sauce over top and bake for about 30-40 minutes or until chicken is fully cooked and cheese is melted.
