Apple and Spice Cookies

Ingredients
- ½ cup butter, softened
- 1 ½ cups packed brown sugar
- 1 egg
- 3 Tbsp. apple juice
- 2 cups all-purpose flour, sifted
- 1 tsp. baking soda
- ½ tsp. salt

1 ¼ tsp. The Spice Hunter Highland Harvested Saigon Cinnamon

¼ tsp. The Spice Hunter Madagascar Ground Cloves

½ tsp. The Spice Hunter Ground East/West Indies Nutmeg
- 1 cup chopped walnuts
- 1 cup chopped apples
- 1 cup raisins
Directions
In a large bowl, cream together butter, brown sugar and egg. Add apple juice and stir to combine. Mix flour, baking soda, salt and spices into butter mixture. Fold in walnuts, apples and raisins. Chill dough for about 30 minutes. Preheat oven to 350°F. Drop dough by rounded teaspoons 2 inches apart on lightly greased cookie sheets. Bake for 12-14 minutes. Let cool and remove from cookie sheets.
