- 5 medium zucchini
- 1 (11 oz.) can of corn with peppers, drained
- 1 (15 oz.) can of black beans, rinsed and drained
- ½ cup salsa
2 tsp. The Spice Hunter Turkish Ground Cumin
- 1 cup grated cheddar cheese, divided
Cut zucchini in half lengthwise and scoop out pulp, leaving a ½ inch shell.
In a medium bowl, mix corn, black beans, salsa and ground cumin. Add ½ cup of cheese and mix again.
Spoon evenly into zucchini boats. Then place on a baking sheet and sprinkle the remaining half of cheese on top.
Bake at 350°F for 35 minutes. Remove from the oven and enjoy!
