Ingredients
- 1 lb. lamb shoulder or leg, trimmed, cut into 1 inch cubes
- ¼ cup lemon juice
- 2 Tbsp. olive oil

1½ Tbsp. The Spice Hunter Greek Seasoning
- red lettuce, sliced or shredded
- ½ cucumber
- 2 tomatoes, sliced
- 1 cup plain lowfat yogurt or tahini
- salt and pepper to taste
- 1 Tbsp. fresh parsley, chopped
- 4 pita pocket bread
- feta cheese, optional
Directions
Preheat broiler or grill. Stir together lemon juice, olive oil and Greek Seasoning. Toss with meat until well coated and marinate while slicing red lettuce, cucumbers and tomatoes. Whip plain yogurt or tahini to a pourable consistency. Thread meat on 4 skewers. Grill or broil to desired doneness while lightly toasting 4 pita pocket breads. Stuff bread with lettuce, meat, cucumbers and tomatoes. Drizzle with yogurt or tahini. Sprinkle with crumbled feta cheese and parsley. Serve with Greek olives.
