Shrimp Fajitas

Ingredients
- 1 lb. medium sized shrimp, peeled, deveined
- ¼ cup safflower oil
- 5 tsp. fresh lime juice

3 Tbsp. The Spice Hunter Fajita Seasoning
- 1 medium red and green bell pepper, sliced
- 1 small red onion, sliced
- 3 scallions, sliced
- ½ cup fresh cilantro
- 4 oz. feta cheese, crumbled
- 1 pkg. corn tortillas, warmed
Directions
Mix oil, lime juice, Fajita Seasoning and shrimp and marinate 4 hours.
Remove shrimp form marinade, set aside.
Sauté peppers and onions in 2 Tbsp. oil for 2 minutes and remove to a platter.
Add 1 Tbsp. of oil to pan. When oil is hot add shrimp, stirring constantly for 3 minutes or until cooked. Add shrimp to pepper mixture.
Pour reserved marinade into pan. Cook 1 minute. Pour over shrimp. Add cilantro and toss.
Serve with tortillas and feta cheese.
