Red Beans and Rice Slow Cooker

- 1 lb. red beans, soaked overnight and rinsed
- 2½ quarts water
- 1 lb. sausage, such as andouille, thickly sliced
- 1 onion, diced
- 1 jalapeno, seeded and diced
- 1 green bell pepper, chopped
- 2 Tbsp. minced garlic

1 Tbsp. The Spice Hunter Cajun Creole Seasoning

½ tsp. The Spice Hunter French Thyme Leaves
- 1 ham hock
- Salt and pepper to taste
- Cooked white rice
Directions
Sauté sausage, onion and peppers in a pan until tender. Add to slow cooker along with the beans, water, seasonings and ham hock. Cover and cook on high for 4 hours, low for 8 hours, or until beans are done. Season to taste with salt and pepper. Thicken beans by removing slow cooker lid and cooking on high until desired thickness is reached. Serve with the cooked white rice. Slow cookers vary; cooking times are approximate.
