Cardamom Roasted Rainbow Carrots

Ingredients
- ½ lb rainbow carrots, halved lengthwise
- 2 tbsp olive oil

½ tsp The Spice Hunter Cardamom

½ tsp The Spice Hunter Cinnamon

¼ tsp The Spice Hunter Brazilian Sea Salt Grinder

⅛ tsp The Spice Hunter Black Pepper

½ tsp The Spice Hunter Dried Parsley leaves for garnish
Directions
- Preheat oven to 400°F (205°C) and prepare a baking tray.
- In the tray, toss the carrots with the olive oil until well coated. Add spices and toss again until fully covered.
- Bake for 23-25 minutes or until carrots are tender. Test by inserting a fork. Plate while hot and garnish with dried parsley leaves. Enjoy!
