Brined Cornish Game Hens

1 cup The Spice Hunter Turkey Brine
- 1 gallon (16 cups) water
- 4 Cornish game hens
- Vegetable oil
- ¼ cup butter

1 tsp. The Spice Hunter Poultry Seasoning Blend
Directions
Bring 8 cups of water to a boil in a medium saucepan. Add brine and stir to dissolve salt. Remove from heat and let cool to room temperature, then refrigerate until cold. Combine chilled brine with the remaining 8 cups of water in a large (2 gallon minimum) container. Add hens to brine, making sure to submerge completely. Chill for 2 to 4 hours. Remove hens from brine, rinse, thoroughly pat dry with paper towels and place in a roasting pan. Rub hens with a small amount of vegetable oil. Heat oven to 450°F and cook hens for 20 minutes, decrease heat to 350°F and continue cooking for about 30 minutes or until the internal temperature is 175°F. Melt butter in a small dish and mix in poultry seasoning. Remove hens from oven, baste with seasoned butter, cover and let rest 10 minutes before serving.
