Ingredients
- 2 cups flour
- 1 cup whole wheat flour

1½ tsp. The Spice Hunter Highland Harvested Saigon Cinnamon
- 1 tsp. baking soda
- ½ tsp. salt

½ tsp. The Spice Hunter Ground Ginger

¼ tsp. The Spice Hunter Ground Jamaican Allspice
- 1 cup butter, softened
- 1½ cups packed brown sugar
- 2 eggs
- 1 cup applesauce (recipe follows)
- 1½ cups raisins
- Powered sugar, for garnish
- 6 apples, we prefer McIntosh for this recipe
- 1 cup water
- 1 Tbsp. fresh lemon juice
- 1 tsp. sugar
- ¼ tsp. The Spice Hunter Highland Harvested Saigon Cinnamon
For Applesauce:
Directions
Preheat oven to 375°F. In a bowl, combine the dry ingredients and set aside. In a mixing bowl, fitted with a paddle attachment, cream the butter. Add the brown sugar and continue creaming. Then add the eggs and applesauce, mixing well. Gradually add the dry ingredients and raisins to make dough. Drop rounded tablespoons of the dough onto a greased cookie sheet and bake until light golden brown, about 9 to 13 minutes. (The cookies do not brown very much.) Sprinkle with powdered sugar. For Applesauce: Peel and core apples and cut into quarters. Place them in a sauce pan with the water and lemon juice and bring to a boil. Simmer about 30 minutes thicken. Remove from heat and stir in the sugar and cinnamon, if desired.
