Lemon Sugar Cookies

Combine sugar and zest in a small bowl. Stir with a fork for 1 minute, making certain that zest is well incorporated into the sugar. Cover and let rest.
- Preheat oven to 350°F. Coat a rimmed baking sheet with non-stick cooking spray.
Cream butter and sugar together in a large bowl until light and fluffy. Add eggs, vanilla, lemon extract and lemon zest, stir to combine.
Add baking powder and baking soda, mix; then add flour one cup at a time, mixing thoroughly between additions.
Drop dough by heaping spoonfuls onto prepared baking sheet. Bake for 10-15 minutes, or until edges begin to brown.
Remove from oven and sprinkle each cookie generously with lemon sugar.
