Twice Baked Potato Casserole

Ingredients
- 4 large potatoes
- 1 cup bacon bits
- 1 cup cheddar cheese
- 2 Tbsp. butter
- ½ cup sour cream
- ½ cup half-and-half

Directions
Preheat oven to 400°F. Pierce whole potatoes several times and bake for 1 hour. Allow potatoes to cool slightly and cut in half and scoop out into a large bowl. Mix in bacon, ½ cup cheddar cheese, butter, sour cream, half-and-half, salt, garlic pepper, and chives. Move to an 8-inch square baking dish and sprinkle with the remaining cheese. Bake for 20-30 minutes until heated thoroughly; serve immediately.
