Szechwan Cucumbers

Ingredients
- 1 large cucumber, sliced
- 1 Tbsp. salt
- 1 tsp. sugar
- 2 Tbsp. rice vinegar or cider vinegar
- 2 Tbsp. oil
- 1 small red onion, sliced

2 tsp. The Spice Hunter Szechwan Seasoning, finely ground
- 1 Tbsp. fresh cilantro
Directions
Toss cucumber with salt and set aside in a colander for ½ hour. Rinse, squeeze out excess water. Combine vinegar and sugar, toss with cucumbers. In small saucepan add oil and sauté onion until translucent; add Szechwan Seasoning. Combine the onion with cucumbers in a bowl. Add cilantro. Serve as an accompaniment to grilled beef or poultry.
