Sweet Potato Puree with Caramelized Tomato

Ingredients
- 6 medium sweet potatoes or yams, baked
- ½ tsp. salt (optional)

½ tsp. The Spice Hunter Ground India Turmeric

¼ tsp. The Spice Hunter Sweet Paprika

¼ tsp. The Spice Hunter Ginger

¼ tsp. The Spice Hunter Ground East/West Indies Nutmeg
- ¼ cup orange juice
- 1 tsp. orange zest
- 2 Tbsp. butter
- 2 Tbsp. brown sugar
- 2 medium Roma tomatoes, seeded and diced
- 3 Tbsp. sliced almonds (optional)
Directions
Slit the baked sweet potatoes/yams and scoop out inside. Place in a medium bowl and mash with a potato masher. Add spices, orange juice and orange zest. Whisk until ingredients are well blended. Heat butter in a medium frying pan over moderate heat. Stir in brown sugar, cook and stir until caramelized. Add the tomatoes and cook, stirring gently until softened. Add the purée and heat thoroughly. Serve and garnish with almonds if desired.
