Spicy Moroccan Lentil Soup

Ingredients
- 1 Tbsp. olive oil
- 2 onions, chopped
- 1 clove garlic, minced
- 6 cups water
- 1 cup red lentils
- 2 (15 oz.) cans garbanzo beans, drained
- 1 (14.5 oz.) can diced tomatoes
- 1 (15 oz.) can tomato sauce
- ½ cup diced carrots
- ½ cup chopped celery

½ tsp. The Spice Hunter Ground Ginger

1 tsp. The Spice Hunter Garam Masala Blend

1 tsp. The Spice Hunter Ground Cardamom

½ tsp. The Spice Hunter Ground Red Pepper

½ tsp. The Spice Hunter Ground Turkish Cumin
- Salt and pepper, optional
Directions
Heat the oil in a large pot over medium heat; add onion and sauté for 5 minutes. Add the garlic, stir, and continue to cook for 1 minute. Add the water, lentils, garbanzo beans, diced tomatoes, tomato sauce, carrots, celery, ginger, garam masala, cardamom, cayenne pepper and cumin. Bring to a boil, then reduce heat, cover and simmer until the lentils are soft, 60-90 minutes. Season with salt and pepper, if desired.
