Pork Roast with Tarragon-Orange Glaze

- 2 lbs. boneless pork roast
- 1 Tbsp. vegetable oil
- 3/4 cup orange juice
- ¼ cup white wine
- ¼ cup brown sugar

1 tsp. The Spice Hunter French Tarragon
- salt and pepper to taste
Directions
Pre-heat oven to 325°F. Rub roast with vegetable oil and place in a baking dish. Combine orange juice, wine, sugar, tarragon, salt, and pepper. Pour mixture over roast in dish. Place baking dish in oven and cook for about 1 hour. Place a thermometer into roast and measure temperature. If temperature has not reached 155-160°F, return to oven and continue cooking until done. Once roast has reached the correct temperature, remove from pan. Next, pour the remaining sauce from dish over roast, let rest for 10 minutes, slice and serve. If more sauce is desired, combine the same amount of all the ingredients, except pork and oil, in a medium saucepan. Cook over medium to medium-high heat until desired thickness is reached. If an even thicker sauce is desired, add 1 Tbsp. cornstarch to sauce and continue to cook until thick. Pour over resting pork roast.
