North African Potato Salad

Ingredients
- 2 lbs. small red potatoes, peeled and quartered
- 2 large tomatoes, diced
- 1 sweet onion, very finely diced

2 tsp. The Spice Hunter 100% Organic Ground Cumin

2 tsp. The Spice Hunter 100% Organic Cilantro
- 2 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- ½ cup green olives, pitted and sliced
- Salt and fresh ground black pepper to taste
Directions
In a large pan of boiling water, cook the potatoes until tender, 15 to 20 minutes. Drain well. While the potatoes are still warm, place them in a salad bowl and mix them with the remaining ingredients.
