Italian Roast Potatoes

Ingredients
- 2 lbs. red potatoes, scrubbed and cut into 2 inch pieces
- 4 Tbsp. olive oil
- 2 cups red onion, diced
- ¼ cups black olives, diced
- ¼ cups green olives, diced

2½ Tbsp. The Spice Hunter Italian Seasoning
- salt and pepper to taste
- Parmesan cheese
Directions
Heat oven to 450°F. In large bowl, toss potatoes with 2 Tbsp. olive oil, salt and pepper. Spread potatoes in a roasting pan, cover with foil and cook for 20 minutes. Remove foil and cook another 15 minutes. Carefully turn potatoes over and cook an additional 5 minutes. As potatoes roast, heat the remaining olive oil in a large skillet on medium high heat. Add onions, olives and Italian seasoning and sauté for 5 minutes. Reduce heat and cook another 15 minutes, allowing the onions to caramelize. Toss them with the potatoes. Sprinkle with Parmesan cheese.
