Caramel Pear Cookie Bars

Ingredients
- ¼ cup butter
- 2 Tbsp. flour
- ¼ cup sugar
- ¼ cup packed dark brown sugar
- 2 Tbsp. water

½ tsp. The Spice Hunter Pure Madagascar Vanilla Extract
- 2 slightly firm pears, pealed and sliced thin
- 1 cup flour
- 1 cup old fashioned oats
- 2/3 cup packed dark brown sugar
- ¼ tsp. baking soda
- ½ cup butter

Directions
Preheat oven to 350°F. Prepare caramel sauce: melt butter in small saucepan, stir in flour, then add sugar, brown sugar, water and vanilla extract. Bring mixture to a boil, reduce heat and simmer about 5 minutes or until thickened, stirring occasionally; set aside. While caramel sauce is cooking, combine flour, oats, brown sugar and baking soda for cookie bars, then cut butter into flour mixture using a pastry cutter or two forks, until the mixture resembles coarse crumbs. Set aside ½ cup of flour mixture and firmly press the remaining flour mixture into a 9x9€ baking dish. Top with pear slices, then pour caramel sauce evenly over top and sprinkle with reserved ½ cup of flour mixture. Bake for about 30 minutes or until top is golden brown. Let cool and cut into bars.
