Tangy Lime-Herb Grilled Fish Fillets



1. Combine oil, lime juice, chives, lime peel, onion powder, paprika, pepper, and salt. Brush on both sides of fish fillets.

2. Place fillets on a lightly greased grill rack, 8-10 inches above medium-hot coals (ash gray and glowing).

3. Grill 2-3 minutes per side for ½-inch thick fillets, 3-4 minutes per side for ¾-inch fillets, or until fish flakes easily with a fork and turns opaque in color when tested.
