Sweet Potato Casserole
Ingredients
- 5 medium sweet potatoes, peeled and diced
- ¼ tsp. salt
- ¼ cup butter
- 2 eggs
- ½ tsp. Sauer's Ground Cinnamon
- ¼ tsp. Sauer's Ground Nutmeg
- ½ cup brown sugar
- 2 Tbsp. heavy cream
Ingredients for Topping
- ¼ cup butter, softened
- 3 Tbsp. flour
- ½ cup brown sugar
- ½ cup chopped pecans
- ⅛ tsp. Sauer's Ground Nutmeg
Preparation
1. Boil sweet potatoes. When cooked, drain and mash. Add the rest of the ingredients to the pan and blend well.
2. Preheat oven to 350°F.
3. While oven is heating, grease a 9 x 13-inch baking dish. Put sweet potato mixture into the baking dish and set aside.
4. In a small dish, combine the topping ingredients until it has the texture of a coarse meal. Sprinkle over the sweet potato mixture.
5. Bake for 30 minutes or until the topping is lightly browned and crisp. Serve as a side dish or even as a desert.
