Stuffed French Toast
Ingredients
- 8 oz. cream cheese, at room temperature
- ½ cup of fruit of choice, peeled, seeded, diced, and drained
- ¼ cup sugar
- ½ tsp. Sauer's Pure Vanilla Extract
- 8 slices bread of choice
- 2 eggs, beaten
- 1 cup milk
- Sifted confectioners' sugar and/or warm maple or maple-flavored syrup, and/or favorite preserves
Preparation
1. In a small bowl, combine the first 4 ingredients, mixing well.
2. Spread mixture onto 4 slices of bread, dividing evenly.
3. Top each cheese coated bread slice with a second bread slice.
4. In a shallow bowl, combine egg and milk, beating lightly with a fork.
5. Dip each sandwich in egg mixture, coating both sides evenly.
6. In a large heavy skillet, pan-fry sandwiches in butter over medium heat until golden brown, about 2 minutes per side.
7. Cut sandwiches in half diagonally and sift confectioners sugar over each.
8. Serve with warm syrup and/or favorite preserves.
