Roasted Beets and Carrots

1. Preheat oven to 425°F.

2. Whisk together olive oil, salt, pepper and poultry seasoning in a small bowl. Add prepared beets and carrots, toss to coat evenly.

3. Place vegetables in a shallow baking dish and roast until a fork easily pierces vegetables, about 40 minutes.
