Quick-Fix Shepherd's Pie
Ingredients
- 1 Tbsp. oil
- 2 lbs. lean ground beef
- ½ cup chopped green pepper
- ½ cup chopped peeled onion
- ½ cup flour
- ½ tsp. Sauer's Celery Salt
- ½ tsp. Sauer's Ground Oregano
- 2 (10.5 oz.) cans beef broth, undiluted
- ⅓ cup ketchup
- 1 tsp. Worcestershire sauce
- 1 (16 oz.) package frozen mixed vegetables, cooked and drained
- 4 cups hot prepared mashed potatoes or 2 (1.25 lb.) packages refrigerated mashed potatoes
- 1 Tbsp. margarine or butter, melted
- Sauer's Salad Delight to taste
- Sauer's Parslied Garlic Salt to taste
Preparation
1. Preheat oven to 425°F.
2. In a large, heavy skillet, heat oil; add ground beef, green pepper, and onion. Sauté over medium heat until meat is brownish-gray in color; drain excess fat.
3. Add flour, celery salt, and oregano, mixing well.
4. Add beef broth, ketchup, and Worcestershire sauce, stirring over medium-high heat until mixture bubbles and thickens. Reduce heat and simmer for 10 minutes. Add vegetables.
5. Spoon into a 2½-3-quart casserole dish. Spoon mashed potatoes in a border around meat and vegetables or fill a pastry piping bag fitted with a 5-point nozzle and pipe potatoes in a lattice design over the top of the casserole.
6. Brush potatoes with melted margarine; sprinkle with Salad Delight and parslied garlic salt.
