Peanut Butter-Chocolate Snack Mix
Ingredients
- 6 cups popped popcorn
- 4 cups crisp, very small rice cereal squares
- 1 cup peanuts
- 1 cup sugar
- ⅔ cup light corn syrup
- 2 Tbsp. butter or margarine
- ½ cup (4 oz.) semi-sweet chocolate pieces
- ½ cup (4 oz.) peanut butter pieces
- 1 tsp. Sauer's Pure Vanilla Extract
- 1 cup dark seedless raisins
Preparation
1. Place popcorn, cereal, and peanuts in a large bowl.
2. In a 2-quart heavy saucepan, combine sugar, corn syrup, and butter; bring to a boil over medium heat, stirring constantly.
3. Remove from heat; stir in chocolate and peanut butter pieces, and vanilla, stirring until melted.
4. Pour hot mixture over ingredients in bowl; stir, coating well.
5. Spoon into a 13 x 9 x 2-inch baking pan. Bake in a preheated very slow oven (250°F) for 45 minutes, stirring every 15 minutes.
6. Remove from oven; stir in raisins.
7. Spoon onto a sheet of aluminum foil to cool.
