Orange-Poppy Seed Muffins
Ingredients
- 2½ cups sifted flour
- ½ cup sugar
- 2½ tsp. baking powder
- ¼ tsp. salt
- 1 Tbsp. grated orange peel
- 2 tsp. Sauer's Poppy Seed
- 2 eggs, at room temperature
- ½ cup oil
- 1 Tbsp. Sauer's Pure Orange Extract
- 1 cup dairy sour cream
Preparation
1. Preheat oven to 400°F.
2. In a large bowl, sift together flour, sugar, baking powder, and salt, Add orange peel and poppy seeds, mixing well.
3. In a small bowl, combine eggs, oil, and orange extract, blending well. Add to dry ingredients with sour cream; mix until just moistened.
4. Spoon batter into greased muffin pans, 2½ inches in diameter, filling each ⅔ full.
5. Bake for 16-18 minutes or until a metal tester inserted in the center of the muffins comes out clean.
