Nutty Ginger Lemon Cookies



1. Preheat oven to 375°F.

2. Cream together butter and brown sugar. Add eggs and lemon extract and mix well.

3. Dissolve baking soda in hot water; stir into sugar and egg mixture.

4. Pre-blend flour, salt and ginger. Stir into dough until fully incorporated.

5. Stir in nuts until evenly mixed.

6. Drop by spoonfuls onto greased cookie sheet.

7. Bake 10-12 minutes.
