No-Bake Chocolate Peanut Butter Cookies

- 8 Tbsp. butter
- 1 cup chocolate chips
- ΒΌ cup cocoa powder
- 1 tsp. Sauer's Vanilla Extract
- 1 cup sugar
- 1 cup creamy peanut butter
- 3 cups quick-cooking oats
Preparation
1. Heat butter in a sauce pan until melted, then add chocolate chips and cocoa powder, stirring until chocolate is completely melted.
2. Stir in vanilla extract and sugar, then allow to boil for 1 minute and 30 seconds while stirring constantly.
3. Remove from heat, then let it slightly cool, mixing in the peanut butter.
4. Add oats to chocolate mixture until completely combined.
5. Scoop mixture (approximately one spoonful) onto parchment-lined baking tray and flatten chocolate-oat mixture slightly- recipe yields about 36 cookies.
6. Allow to cool completely for 1 hour before eating.
