Daikon Radish Pickles
Ingredients
- 1 cup water
- 2 cups rice vinegar
- ¾ cup sugar
- 1 Tbsp. kosher salt
- 2 cloves garlic, sliced
- 1 tsp. Sauer's Ground Turmeric
- 25 peppercorns from Sauer's Peppercorn Medley Grinder
- 2 Sauer's Bay Leaves
- 1 large daikon radish, peeled and cut into 6 inch by ¼ inch strips
Preparation
1. In a medium saucepan, stir together water, vinegar, sugar, salt, garlic, turmeric, peppercorns, and bay leaves. Bring to a boil over medium-high heat, stirring to dissolve the sugar.
2. Transfer juices to a bowl with the cut radishes. Let sit for 2 hours.
3. Transfer radishes and juice into jars and refrigerate or can.
